Heat half a cup of oil in a pan. Add the pounded shallots and garlic, followed by Baba’s Chilli Powder. Fry on medium heat until the oil begins to separate and the mixture becomes a deep red colour. This releases the flavour of the spices.
Add in the sliced onion and continue frying for a couple of minutes.
Stir in salt, sugar and tamarind juice. Mix well until the sauce balances between spicy, tangy and slightly sweet.
Add the fried anchovies last and stir them through the sambal until evenly coated. Cook for another 2 minutes, then remove from heat.
Serve with hot rice, nasi lemak, or use as a side dish with fried foods.
