Prepare a fragrant, comforting Chinese soup at home with Onkee Agrocybe Aegerita and Cordyceps Soup 袪濕強身湯. This convenient Cantonese-style dried soup mix combines two aromatic mushroom varieties with Chinese yam, jujube, apricot kernels and dried tangerine peel.

Agrocybe aegerita, also known as tea tree mushroom, gives the broth a rich, earthy mushroom aroma, while cordyceps flower adds a delicate savoury flavour. The jujube and candied dates bring natural sweetness, creating a balanced soup that is warming, fragrant and easy to enjoy throughout the year.

In traditional Cantonese cooking, this type of herbal soup is commonly prepared during spring and summer and is described as a soup for “dispelling dampness”. This refers to its traditional culinary use and should not be interpreted as a medical claim.

To prepare, rinse the ingredients thoroughly. Soak the dried tangerine peel until softened and remove the inner pith. Add the soup ingredients to a pot with blanched pork ribs, chicken or your preferred protein, then simmer gently for approximately two hours. Season lightly with salt before serving.
