Dried chillies, known in Malaysia as cili kering, are one of the most important ingredients in a Malaysian kitchen. Soaked and blended into chilli paste (cili boh), they are the base of almost every sambal, from nasi lemak sambal to sambal tumis and sambal ikan bilis.
They bring a deep red colour and a rich, rounded heat that is different from fresh chillies, which is why they go into rendang, curry mee, laksa paste, asam pedas and mee goreng.
In Chinese cooking they are fried whole in hot oil for kung pao chicken and dry-fried dishes, and they are the starting point for homemade chilli oil.

For chilli paste (cili boh), snip off the stems, shake out some seeds for gentler heat, soak in hot water until soft, then blend with a little water or oil. For stir-fries, fry whole in hot oil for a few seconds until fragrant.
