Dried beancurd sticks are particularly good at taking on flavour. Simmer them in a savoury sauce and it works its way into the layers, leaving the sticks tender with a little chew.
Known as fu zhu, fu chuk or dried tofu skin, they are made from the skin that forms on heated soya milk. They have long been used in Chinese home cooking, especially in braises, soups and vegetable dishes.
Favor Chef’s sticks need rehydrating before cooking. Follow the packet instructions and allow them to soften all the way through, then drain and cut into manageable lengths.
Try them with mushrooms and vegetables in a clay pot, simmer them in a soy-based braise or add them to hotpot. They also work in mixed vegetable dishes such as Buddha’s Delight, where their layered texture adds interest alongside cabbage and mushrooms.
Once softened, handle them gently so you keep some of those layers intact. Let them spend enough time in the sauce to absorb its flavour.
A useful cupboard ingredient when you want more variety in a vegetable meal.
