How Is Ikan Bilis Different From UK Supermarket Anchovies?

The anchovy fillets commonly sold in tins and jars in UK supermarkets are usually salt-cured and packed in oil. Their soft texture works well in pasta sauces, on pizza and in dressings. Jeeny’s ikan bilis are dried whole, with the heads intact, and can be fried until crisp or simmered to make stock.
