A rich, savoury tonkotsu-style broth and springy noodles make this an easy starting point for a bowl you can build on.

Demae Iccho first launched in Japan in 1968. Also known as Demae Ramen, the range went on to become familiar in Hong Kong homes and cafés, where packet noodles are often served with eggs, luncheon meat and other toppings.

The Kyushu Tonkotsu flavour takes its inspiration from the rich noodle soups associated with Japan’s southern island of Kyushu. Expect a creamy-style, savoury broth that works well with simple additions.

For a Hong Kong café-style bowl, try a fried egg and a few slices of pan-fried luncheon meat. For something greener, add mushrooms, cooked leafy vegetables and sliced spring onion.

Prepare the noodles and seasonings according to the packet instructions, then finish with your toppings. You do not need a long list of extras: even an egg and some greens will give the bowl more texture.

This is also a useful way to work through small amounts of cooked meat or vegetables already in the fridge.
