Pour some into a bowl, put the kettle on and you have a snack that needs very little arranging. Bikaji Bombay Mix combines fine savoury noodles, pulses, peanuts and peas with a warm, spiced seasoning.

Bikaji comes from Bikaner in Rajasthan, a city closely associated with bhujia and other namkeen. Namkeen is the broad name for savoury Indian snacks, and a bowl offered with chai is a familiar way to welcome someone into the house.

This Bombay mix gives you several textures in each handful: fine crisp strands, firmer pulses and the rounded crunch of peanuts. The seasoning is savoury and aromatic, with a little tang alongside the spice.

Eat it as it comes or use a small handful to finish a bowl of chaat. It also adds crunch to chopped onion, tomato and coriander; mix just before eating so the dry pieces keep their bite.

For sharing, start with a small bowl and top it up as you go. That keeps the rest of the bag sealed while everyone works through the first serving.
