Crispy skin snacks are eaten across Southeast Asia, including as Filipino chicharon. This version takes its seasoning cue from tom yum, the Thai flavour associated with a balance of sourness, chilli warmth and fragrance.

The result has a different feel from the Original or Korean BBQ versions. The tang comes through alongside the savoury chicken, making this a useful choice when you prefer a sharper seasoning to a sweeter barbecue flavour.
