Beef brisket, chunks of daikon and a savoury gravy to spoon over rice. Chu hou paste is the seasoning behind this familiar Cantonese-style braise.

Lee Kum Kee has roots in Guangdong and has been based in Hong Kong since 1932. Its Chu Hou Paste, also described as Chinese five-spice sauce, combines fermented bean savouriness with sesame, warming spice and a little sweetness.

Stir some into water or stock, add your ingredients and let everything simmer together. As the dish cooks, the sauce flavours the meat and vegetables and develops into a richer gravy.

Beef brisket is the classic starting point, but the paste also works with mushrooms, tofu and mixed vegetables. Try it in a clay pot dish or use a little to bring depth to a simple stew.

Because it is concentrated, begin with a small amount. Taste again as the liquid reduces before deciding whether the dish needs more paste or other seasoning.

Serve with steamed rice and a plate of greens to make a meal around the braise.
