To prepare the Assam Laksa, start by using either fresh fish or canned mackerel. If using fresh fish, boil it, remove the bones, and reserve the fish stock. Top up the stock to about one litre, then add the Assam Laksa paste and stir well. Add a splash of pineapple juice to enhance the flavor, and bring the soup to a boil.
Serve the hot soup over cooked thick rice noodles, and garnish with fresh mint, cucumber, lettuce, pineapple, and the prepared fish or mackerel.
