Smooth, dark jelly with a gently bitter herbal flavour and a little sweetness. Zhizhonghe Gui Ling Gou is ready to eat, with a soft texture you can enjoy by the spoonful.

Gui ling gou, or guilinggao, is a traditional Chinese jelly dessert also familiar in Hong Kong and Malaysian Chinese food culture. Its herbal character makes it quite different from a brightly flavoured fruit jelly.

Chill the unopened container before serving if you like a cooler dessert. Spoon the jelly straight from the pack, or turn it into a small bowl so you can add your own accompaniments.

Try it plain first to taste the balance of sweetness and bitterness. A little honey or sugar syrup can be added at the table if you prefer a sweeter finish; these are serving suggestions and are supplied separately.

It also works as a small dessert after a richer meal, when you want a change of flavour. There is no powder to dissolve, cooking step or setting time needed.
